Ricefield Crawfish Recipe | Rich Cheddar Cheese Squash with Crawfish Tails
Ingredients
- 3 lbs. frozen yellow squash
- 1/4 lb.butter
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 lb. cleaned crawfish tails
- 1/4 cup grated cheddar cheese
- Salt and pepper to taste
Instructions
- in a Dutch oven melt butter and sauté onions and bell peppers
- add squash and seasonings to the sauté
- cook for approximately 1/2 hour or until squash is tender
- add crawfish and cheese
- cook for approximately 10 minutes or until cheese is melted
Serves 6.
Note: This can also be served over cooked long grain rice as a side dish.
